PS this isn’t gluten-free in a “gluten is bad for everyone” kind of way. It’s gluten-free in a “oats are awesome and the gluten-free girlies deserve an amazing pumpkin bread” kind of way. Gluten is totally fine for those of us who can tolerate it. 

Here’s how to make it!

Ingredients:
2 cups gluten-free rolled oats
1 cup canned pumpkin puree, not pumpkin pie filling
2 large eggs
2/3 cup maple syrup
1/3 cup olive oil
1/3 cup plain greek yogurt
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1 tsp vanilla extract
1/2 tsp salt
1/2 tsp ground nutmeg
1/2 tsp ground ginger
