For the vanilla custard: 
750g milk
2 vanilla beans
65g honey
75g sugar
65g cornstarch
190g whipping cream
150g egg yolks
1/2 tsp. salt
37g unsalted butter

1 sheet puff pastry

1. Grease a 18cm x 6cm ring mold with some soft butter and sprinkle with sugar. 
2. Line the ring with puff pastry rolled to about 4mm thick. Place in the freezer for at least 2 hours.
3. To make the custard, place the milk and vanilla pods & seeds in a saucepan. Whisk and bring to a simmer. Remove from heat and cover with plastic wrap. Infuse for at least an hour (or overnight for more intense flavor).
4. Strain the milk and place it back in a saucepan. Add honey + sugar and bring to a boil.
