Chuck Roast Tacos
Ingredients: 1 boneless beef chuck roast (4 lbs) 2 tbsp taco seasoning Guac: 3 Avocados, Juice of 2 limes, Juice of 1/2 orange, 2-3 tbsp chopped red onion, 1/4 cup of fresh cilantro, 1/2 tsp salt, 1/4 tsp pepper Directions: Preheat oven to 325. Season Roast generously on both sides with salt, pepper and taco seasoning. Add to baking dish and cover with foils (or use baking dish with a lid), and bake for 1 hour per pound of meat. Remove from the oven and shred into large chunks. (If roast doesn’t pull apart easily, put it in for another 30 mins) Raise the heat to 425, toss the shredded meat around in the rendered fat and place it back in the oven, uncovered, for 20-25 mins until you see nice crispy ends. Then assemble tacos and enjoy.
Mexican Pot Roast
Slow Cooker Beef Roast Threw a pot roast into the slow cooker for this deliciousness! -I used a 2.5lb beef roast (let it come to room temp before cooking) -Season all sides of roast • -Sear all sides in a cast iron skillet • -Add to slow cooker • -Sautéed onions and jalapeños in cast iron for about 1-2 minutes to grab all the flavor left behind from searing • -add to slow cooker • -1/2 cup of beef broth/beef bouillon • -1 can of chipolte -Cook on low for 8 hours Seasonings I used: -salt • -pepper • -cumin • -adobo (hot) • -Mexican chilie powder • -onion powder • -garlic powder • -sazon • -smoke paprika -slap ya mama (hot) The flavor is everything! Shredded Beef Tacos
Shredded Beef Tacos Ingredients • 2-3lb beef chuck roast • 2 tsp kosher salt • 3 cups beef stock • 1 orange juiced • 1 lime juiced • 1/2 tsp black pepper • 2 tbsp HealthyRican Sofrito Seasoning • 28oz can diced tomatoes • 1 onion, diced • 1 jalapeno, diced • 1 tbsp olive oil 2 tsp garlic, minced Preheat the oven to 350 degrees. Place a large dutch oven over medium/high heat. Add the olive oil and let it heat up for a few minutes. Season both sides of the chuck roast with sofrito seasoning and 1 tsp of salt. Sear both sides of the roast. Add the rest of the ingredients to the pot and stir some. Bring to a boil, cover and place in the oven for 3-5hrs until fork tender. Remove, shred in the pan. Tacos: fresh cilantro, cheese, lime, jalapeno. Top your tacos with your favorite
