A silog is a Filipino breakfast composed of three parts: sinangag or garlic fried rice, itlog aka fried egg, plus the addition of a type of protein. In this dish, the protein is daing na Bangus.

Daing na bangus is a traditional Filipino dish made by marinating butterflied milkfish in a mixture of vinegar, garlic, and spices. The fish is then pan-fried until crispy, with the skin left on for added crunch, but instead of pan frying, I decided to airfry for an alternative way of cooking. This plate is paired with atchara, salted duck egg and tomato, with a side of spicy vinegar. 

Bangus:

To make them-  wash your 🥚 eggs, then roll them in an alcohol spirit to sanitize the eggs. After that, we need to create a salty brine with salt, water, star anise, bay leaves and some shaoxing wine. 

Through osmosis salt does its thing, sucking out moisture from the eggs and giving them that signature salty flavor.  Pop them into a cupboard and forget about them for a few weeks! 

And when it comes to cooking, these eggs are so versatile. You can snack on them solo, or toss them into dishes like congee, salads, or stir-fries.
