Ingredients

45 minutes including soak time
3-4 servings
  1. 1 packet glass noodles (sweet potato noodles) 3.5 oz, soaked
  2. 5 dried shiitake mushrooms, soaked and sliced (or fresh mushrooms)
  3. 1/2 small onion, sliced
  4. 1/2 small red bell pepper, sliced
  5. 1 " piece of ginger, minced
  6. 4 garlic cloves, chopped
  7. 1/8 teaspoon red pepper flakes
  8. Bok choy, sliced
  9. 2 Tbsp soy sauce
  10. 1 cup chicken stock, or vegetable
  11. 1/2 pound raw shrimp
  12. Lemon wedges for serving

Cooking Instructions

    Soak the dried glass noodles in hot water for 30 minutes as you prep. If using dried shiitake mushrooms, soak in hot water 15 min before slicing.

    Heat the oil in a large non-stick pan over medium heat. Saute onion, red bell pepper and ginger until softened, a few minutes.

    Add garlic and red pepper flakes, mix well and cook 1 minute.

    Add sliced bok choy and mushrooms, mix well, cook one minute.

    Add soy sauce, soaked noodles and about 3/4 cup of stock. (Save the rest to use if needed.)
    Mix well, cover and reduce heat. Cook for a few minutes - noodles will absorb stock.

    Add shrimp, mix well, adding more stock if needed.

    Cover and cook until shrimp are done (turn pink), about 3 minutes.
    Serve with lemon wedges. Enjoy!
