Ingredients: 8 oz canned coconut cream (can’t find canned coconut cream? Just scoop the top layer off of 2 cans of full fat coconut milk instead) 2/3 cup vanilla or plain coconut yogurt (or any kind of dairy-free yogurt) 1/3 cup powdered sugar 2 TBSP lemon juice Zest of 1 lemon Optional; a pinch of natural yellow food coloring or a tiny pinch of ground turmeric (this is for color only) Directions: Combine all ingredients in a blender or food processor, or use a hand held mixer, and mix until smooth. Spoon into individual serving glasses of your choice and refrigerate, or just refrigerate the entire bowl! Serve with a dollop of vegan/coconut whipped cream and a slice of lemon and enjoy! Leftovers can be kept/stored in the refrigerator for 3-4 days.
