The Peaceful Press on Instagram: "☘️ Irish Stew ☘️ - 2 pounds lamb or beef boneless stew meat - 2 tablespoons olive oil - 1 teaspoon salt - Pepper - 1 onion chopped - 4 minced garlic cloves - 4 cups beef broth - 5 carrots, peeled and cut into 1-inch chunks - 5 potatoes, peeled and cut into 1-to 2-inch chunks - 1 bay leaf 1. Heat oil in heavy pot over medium high heat. 2. Brown meat. 3. Lower heat to medium, add garlic and onion and cook until soft and translucent. 4. Add broth, salt, vegetable chunks, and bay leaf. 5. Bring to simmer and cook over medium low heat until meat and vegetables are tender, approximately two hours. We first had leek and potato soup yearsssss ago at a restaurant on Bainbridge Island in WA… we used to live in Sammamish, WA 13 years ago!! My oldest daughter, Phoebe, fell in love and this became her favorite soup.
