Cong You Bing {葱油饼}, or scallion pancake, is a popular savory Chinese layered flatbread. It features crispy outside with thin layers of soft bread inside filled with enticing spiced fragrant and flavor. I make both unlavened and semi-lavened version. Lately, I found myself always making the semi-lavened version.
