This late summer pie captures the incomparable flavors of concord grapes. Don't be tempted by seedless varieties like Thomcord—it's worth the extra step. The grapes are slipped out of their skins and the filling is run through a food mill or sieve to remove the seeds, and then the colorful skins are stirred back in the filling.
