Ingredients
(For the compote)
100g Blackberries
100g Chopped Pears 
100g Cherries (frozen if you can't find fresh)
80g Sugar
1 Lemon, zest and lemon

(Roasted Plums)
4 Plums, thinly sliced
2 Tbsp Sugar

(Rest)
350ml Double Cream
1 Tsp Vanilla Bean Paste
1 Tbsp Icing Sugar
4-6 Meringues- crushed 

Method

1) Preheat your oven to 180°C Fan. Add the finely chopped plums & sugar together into a baking tray. Roast for 10-15 minutes until jammy.
