5 hand shaped chicken tsukune meatballs served on a rectangular plate with spring onion and raw egg yolk for dipping

Chicken tsukune is a delicious and flavourful type of Japanese meatball often served at izakayas, yakitori stands, at home and in bento boxes. My homemade tsukune recipe is made with chicken thigh mixed with grated onion, shiso leaves, miso paste and ginger amongst other seasonings. They are then shaped, fried and coated in a delicious sticky glaze!

several skewered meatballs are on a white plate

Tsukune (Japanese Chicken Meatballs) is a regular Yakitori dish items. Soft and bouncy chicken meatballs are skewered and chargrilled with sweet soy sauce, i.e. yakitori sauce. The key to my soft and juicy meatballs is the grated onion and the amount of fat in the chicken mince (ground chicken). Don't forget to see the section 'MEAL IDEAS' below the recipe card! a wooden table topped with lots of plates and bowls filled with different types of food

Tsukune Hot Pot, or Tori Dango Nabe, is a Japanese hot pot recipe where ginger-flavored chicken meatballs are simmered in a dashi-based broth along with a healthy mix of tofu, vegetables, and mushrooms. Cooked at the table in a donabe clay pot, it’s a warm and comforting family-style dinner for fall and winter nights.

Most yakitori-ya (grilled chicken shops) will have their own special tsukune, for the simple reason that the Japanese chicken meatball recipe uses up chicken scraps that might otherwise go to waste. The best tsukune is nicely caramelized, well seasoned, and juicy—and served straight off the grill so that you can capture all those delicious volatile compounds while they’re still activated. Serve with a raw egg yolk and a tablespoon of tare on the side. It makes a lovely dipping sauce.
