INGREDIENTS:
1 lb strawberries, sliced + 2 Tbsp sugar
8 vanilla sandwich cookies
1 Tbsp strawberry gelatin
1 Tbsp softened unsalted butter
1 pt heavy whipping cream
14 oz sweetened condensed milk
1 cup angel food cake or pound cake, cubed

INSTRUCTIONS:

Strawberry puree: Toss berries and sugar together, let sit 30 minutes until soft and juicy, then blend & strain

Shortcake crumble: Pulse cookies + gelatin + butter until crumbly

Ice cream base: Whip cream to soft peaks, pour in condensed milk and mix until smooth

Assemble: Fold in cake cubes, spread into a parchment-lined 9×9 pan

Finish: Swirl in puree + crumble, freeze at least 8 hrs or until

It’s so easy to make the most delicious sorbet with your favorite fruit, this time I’m trying pineapple…and it worked SO WELL! My favorite part is eating the sorbet right out of the pineapple. Absolute summer vibes. To make it, I just cut up a pineapple and froze it, then blended it with a squeeze of lime and some honey. Couldn’t be easier!!
