Ingredients: * 1 1/2 cups calrose rice (cooked in a rice cooker with 2 1/2 cups water and salt. seasoned with 3 tbsp rice vin and 1.5 tbsp sugar). * 1 lb sushi grade salmon (finely chopped). * 3 tbsp japanese mayo. * 2 tbsp sriracha. * 1.5 tsp sesame oil. * 1.5 tsp tamari. * 3 tbsp chives. * 2 serranos (thinly sliced). * 1 large english cucumber (thinly sliced). * 2 large avocados (sliced). * 2 tbsp black sesame seeds (more for topping). * 2 tbsp toasted sesame seeds (more for topping).
