If your bread dries out, is rock hard, within 3-5 days of baking, you can just soak it under running water, bake it on a cookie tray at 375 for 15 min and it will be as good as new! The FLUFFIEST Sourdough Dinner Rolls! If there’s one recipe of mine to have on your Thanksgiving table, it’s these dinner rolls. They’re infused with rosemary, but you could leave out or substitute with another aromatic herb of your choosing, such as rosemary, thyme, or sage. “How are they so squishy and soft?” you might wonder. I use the Yudane method, which is a Japanese method of gelatinizing flour and boiling water together. It’s similar to Tangzhong (but easier IMO) and allows for the rolls to take in even more moisture and remain soft for longer. 1hr 25min · 8 servings Ingredients: For the Dough • 1 cup + 2 Tablespoons warm water • 1 Tablespoon dark brown sugar • 2 teaspoons kosher salt • 2 ¼ teaspoons active dry yeast • 200 grams (about ¾ cup) sourdough discard unfed, at room temperature • 567 grams (about 4 cups) all-purpose flour • 4 Tablespoons unsalted butter melted For Boiling • 10 cups water • ⅔ cup baking soda For Topping • 1 egg yolk beaten with 1 Tablespoon water to make an egg wash • Flaky sea salt for topping To make these mini, divide the dough into 16 pieces rather than 8 full-size pretzels.
