In Sweden Semla is traditionally eaten on Shrove Tuesday. The dough is the same as the cinnamon-roll dough. Imagine a semisweet bun filled with almond paste and wiped cream. When I was a kid I used to eat “Het vägg”. It’s when you put the Semla into a bowl and add some hot milk over it . An old Swedish tradition. And it’s delicious! You have to try it.

Traditionally eaten before Lent, Swedish semlor are a most delicious baked good. The semla (singular of "semlor"), consists of a cardamom bun filled with almond paste and whipped cream. You can make your own almond paste by combining 50% almonds and 50% sugar in a food processor and grinding to a paste. However, I find it easier to use a storebought version.Recipe adapted from recipes in "Fika" by Anna Brones and Johanna Kindvall and the Swedish cook book "Vår Kok Bok."

Every year, Fat Tuesday, or Semmeldagen, as the Swedes like to call it, falls on the seventh week before Easter. In Sweden, it's considered the national day of Sweden's most beloved pastry, the semla. The tradition is centuries old but the day and perhaps most importantly, the pastry, seem to be getting more popular by the year. It's no wonder that an estimated six million semlor are sold in one single day during Fat Tuesday.
