Mini Mac Muffin Bites 🍔 🧀
1tsp. olive oil, 1 medium onion, finely chopped, 1lb. lean ground beef, 1 can Campbell’s® Cheddar Cheese Soup, 28 oz. frozen fried potato nuggets (about 90), thawed, 18 pickle slices, 1/4cup mayonnaise, 1/4cup thousand island dressing, shredded lettuce & finely diced tomatoes. Heat oven to 450°F. Spray 18 (2 1/2-inch) nonstick muffin-pan cups w/ cooking spray. Add 5 potato nuggets into muffin cup. Use a small glass, press down on nuggets. Bake 25-30mins. Remove from oven. Heat oil in 12-inch skillet over medium-high heat. Add onion. Cook for 4-5mins. Add ground beef & cook til browned. Spoon off fat. Stir in soup & cook until mixture is hot. Remove potato cups from pan. Add pickle slices & meat mixture in cups. Add lettuce & tomato. Drizzle over mixed mayonnaise & thousand island dressing.
