I shared a Zucchini version of this last week and so many of you were asking if its possible to make a lowcarb version with pickles. It took a few tweaks, but its pretty good! Instead of cheese in the sandwich, we are putting it around it and makes a great flatbread like vessel that you can use to make your favorite lowcarb, keto-friendly sandwich.
