Mint jelly made from the fresh leaves of mint is such a sweet refreshing jelly with a delicious mint flavor. It is so easy to make from the mint leaves from your herb garden. If you have mint, it is usually abundant and this is a great and tasty way to use it! Mint pairs well with many foods including roasted lamb, pork chops, and grilled fish. It can also be combined with mustard and home to make a delicious glaze for ham. Mix it with Greek yogurt and serve with vegetables or crackers.

With so much mint growing, we harvested a bunch of it to make a double batch of this easy to make, yet so delicious, mint jelly.
