Roasted chicken and rice

This one pot whole chicken Spanish and rice is the perfect weeknight meal. It's ready in 1 hour and is full of protein and vegetables.

3.5 lb chicken garlic salt 4 tb olive oil 2 c jasmine rice ½ onion chopped 1 lemon cut in 2 4 c chicken broth S&P 350 Season chicken Heat Dutch oven over medium, sear chicken on all sides. Remove to a plate to rest Heat oil Add rice & onion brown 15min Add 1/2 lemon to the rice, put other in chicken Add broth, S&P, stir, add chicken breast side down Cover and roast 90 minutes or until the chicken is cooked through. Let rest at least 10 minutes before serving.
