Miso Salmon
- 2 tbsp sake 
- 2 tbsp mirin 
- 2 tbsp white miso paste 
- 1 ½ tbsp sugar ( I used coconut sugar)
- 2 (4 to 6-ounce pieces salmon

Cucumber Salad
- 2x sliced persian cucumbers
- 1 tsp white wine vingegar
- 1/2 tsp olive oil
- Salt & pepper

Other:
- 1 cup white rice
- 1/4 cup Steamed or boiled edamame
- Sautéed zucchini w/ olive oil salt & pepper
- Seaweed 

Miso Marinade Method:
1. In a small saucepan, bring sake and mirin to a boil over high heat. 
2. Boil for an additional 20 seconds to evaporate the alcohol. 
3. Lower the heat, then whisk in **white miso paste and sugar until fully dissolved.
