🌱Vegetable rice paper taquitos 🌱

For the filling:
1 block extra firm tofu , crumbled 
2 tablespoons sesame oil
8 shiitake mushrooms , chopped
2 cups green cabbage, chopped
1 carrot, peeled and grated
2 green onions , chopped
1 tablespoon garlic granules 
1 teaspoon ginger powder
1 tablespoon tamari
1 teaspoon coconut aminos 
Black and white sesame seeds

16 rice paper wraps

Dipping sauce:
1 tablespoon tamari 
1 teaspoon ginger paste
1 teaspoon sriracha 
1 teaspoon chopped green onion

Heat a medium frying pan of a medium high heat. This month, I will share my vegan (mostly) Vietnamese recipes and show you how vegan food is simply delicious food. As a child, I used wheat-based wrappers for fried spring rolls, since they were a little quicker to work with and developed a nice golden brown color as they cooked. Now that I’m older, I realize I prefer rice paper. It just tastes better. When you brush the outer layer of rice paper with cornstarch slurry, it becomes extra crispy and chewy. For the filling, the ingredients and flavors are typical of Vietnamese fried spring rolls but feel free to adjust the filling to your liking or what is available to you.
