Without the veggies, this is a very frugal recipe. Just add smoked paprika, cayenne pepper or dried herbs instead. HOWEVER, I prefer this just as a savory pancake rather than trying to mimic scrambled eggs. I do not think the texture is right. I just mix the batter, pour it in the pan with a little oil and flip it like a flapjack. It could be served then with a chutney, pickles, or the vegetables on top. It's very tasty but trying to eat this as "scrambled eggs" made me feel ridiculous.
