  • Fernando Collantes’ book, Milk in Spain and the History of Diet Change. The Political Economy of Dairy Consumption since 1950, analyses the evolution of the consumption of milk and milk products (cheese, yogurt) in Spain between the mid-20th century and the 2020s. It is a socio-economic study on the consumption of a food that is essential for a healthy diet that offers the possibility of scanning the stages of the transformation of the diet of Spaniards that occurred in the period from 1950 to the present.
