Grilled Steak Tacos with Elote (Mexican Street Corn)
Ingredients: For the Steak: 1 lb flank steak 1 tbsp olive oil 2 tsp chili powder 1 tsp cumin 1 tsp garlic powder 1 tsp smoked paprika Salt & pepper (to taste) For the Elote (Mexican Street Corn): 4 ears of corn (husks removed) 2 tbsp mayonnaise 2 tbsp sour cream 1 tsp chili powder 1 tsp lime zest ¼ cup cotija cheese (crumbled) Fresh cilantro (chopped, for garnish) 1 lime (cut into wedges) For the Tacos: 8 small corn tortillas Salsa verde (optional) Instructions: Preheat grill to medium-high heat. Brush steak with olive oil and season with chili powder, cumin, garlic powder, smoked paprika, salt, and pepper. Grill the steak for 5-7 minutes per side, or until it reaches desired doneness. Let it rest for a few minutes, then slice thinly against the grain.
