Broccoli Rice Casserole: Spray a 2-qt. baking dish with PAM & preheat oven to 350°F. Saute 1/2 c. onion until soft & translucent. Cook 16 oz. of frozen broccoli in boiling water for about ten minutes or until almost tender; drain very well. Mix broccoli & onion with 1 c. milk, 1/2 lb of Velvetta, 3 c. cooked rice, & 1/2 tsp. pepper. Place in baking dish and bake for 25 minutes.
