Mexican Street Corn Dip
This super easy recipe has all the flavors of Mexican street corn and it's ready in just 10 minutes. Serve cold or warm with tortilla chips or Fritos. Everyone loves this corn dip! Perfect for picnics, potlucks, or take to the pool as a snack. You can vary the flavor by using Chipotle (smoked flavor), Street taco or fajita seasoning. Made Southwest canned corn (or Mexicorn), sour cream or Mexican crema, cream cheese, Mexican cheese blend or try it with authentic cojita cheese.
Easy Mexican Street Corn Dip! (Esquites)
15min · 4 servings Ingredients: • 4 cups fresh corn kernels, (about 4 cobs)* • 1 4oz can diced green chilis, drained and rinsed (I use hot chiles) • ⅓ cup sour cream • ½ cup cotija cheese • ¼ Tbsp + 2 Tbsp cilantro, chopped • 2 Tbsp red onion, finely chopped • 1 jalapeno, deseeded & finely chopped • 1 small garlic clove, minced • 1 lime, juiced • 1 tsp chili powder • ½ tsp salt *Frozen or canned corn can be used instead.
