If you’d like, remove the stems from a few fresh bay leaves and grind them in a spice grinder or food processor, then rub them through a fine sieve and sprinkle the top of the pie with the dust. If you don’t have fresh bay leaves, you can add a few sprigs of rosemary to (and immediately remove it from) the syrup at the same time as the cinnamon and cardamom. Sliced lemongrass, lemon balm or verbena are lovely alternatives.

It tends to be heavy and sodden, but in her book “Aegean,” Leivaditaki tells of a friend’s mother who made the best, lightest portokalopita she’d ever tried. She toasted the phyllo strips first, which gave the cake lift and a layered structure, with almost a sponge cake-like texture. ⁠
