It’s fiery yet creamy and sooo slurpable, especially during these nippier months. Start by cooking your noodles of choice. I’m using ramen. You can blanche some leafy greens like bok choy as well whilst the noodles are cooking. Drain the noodles , but reserve the hot and starchy noodle water. To a heatproof bowl, add: - 2-3 cloves of minced garlic - Knob of ginger, grated - 1-2 tsp sesame seeds - 2-3 tsp gochugaru/ chilli flakes Add 1.5 tbsp of hot sesame oil, followed by: - 1/2 tbsp Gochujang paste - 1 tbsp peanut butter/ tahini - 1 tbsp soy sauce - 1/2 tbsp rice vinegar Give it a brisk whisk to combine well.
