Ranch Potato Salad
Ranch Potato Salad Ingredients: 2 lbs baby potatoes, cut into bite-sized pieces ½ cup ranch dressing ¼ cup mayonnaise 1 tbsp Dijon mustard 1 tsp apple cider vinegar ½ cup chopped celery ¼ cup chopped red onion ¼ cup chopped fresh parsley Salt and pepper, to taste Optional: crumbled bacon, for garnish Instructions: Boil potatoes until tender, about 10-12 mins. Drain and let cool. Mix ranch, mayonnaise, mustard, and vinegar. Add potatoes, celery, onion, and parsley. Toss to coat. Season with salt and pepper. Chill before serving. Optional: Top with crumbled bacon. Prep Time: 15 mins | Cook Time: 12 mins | Total Time: 27 mins | Kcal: 280 | Servings: 6

Slow cooker Beef Meatballs, Onions & Gravy by boredoflunch Ingredients: - 500g of meatballs, you can buy pre rolled or make your own - 2 x onions cut into rings - 2-3 tbsp tomato purée - 2 tbsp Worcestershire sauce - 1 tbsp Dijon mustard - 1 tsp oregano - 1 tsp onion granules - 3 crushed garlic cloves - Salt and pepper - 400ml of beef stock - 2 tbsp bistro gravy powder with 50ml water Method: 1. Cook your meatballs for a few minutes on the pan to brown, add to your slowcooker 2. Fry the onions on the same pan including the juices from the meatballs, then add this to the slowcooker with all other ingredients 3. Cook on high for 4 hours or low for 7-8 4. These Rice Paper Pancakes offer a Vietnamese twist on Korean vegetable pancakes. Easy to make, crispy, and incredibly delicious, they provide a creative way to incorporate a variety of vegetables into a pancake format.

Silky tofu ricotta, gremolata marinated butter beans and grilled artichoke hearts, topped with my favourite thing ever - crispy capers. I’m calling this a salad, but you can argue about that in the comments. It’s great as a starter, or a nice lunch. I had it with some crusty bread last night and it made a delicious dinner for me too.
