Ranch Potato Salad Ingredients: 2 lbs baby potatoes, cut into bite-sized pieces ½ cup ranch dressing ¼ cup mayonnaise 1 tbsp Dijon mustard 1 tsp apple cider vinegar ½ cup chopped celery ¼ cup chopped red onion ¼ cup chopped fresh parsley Salt and pepper, to taste Optional: crumbled bacon, for garnish Instructions: Boil potatoes until tender, about 10-12 mins. Drain and let cool. Mix ranch, mayonnaise, mustard, and vinegar. Add potatoes, celery, onion, and parsley. Toss to coat. Season with salt and pepper. Chill before serving. Slow cooker Beef Meatballs, Onions & Gravy by boredoflunch Ingredients: - 500g of meatballs, you can buy pre rolled or make your own - 2 x onions cut into rings - 2-3 tbsp tomato purée - 2 tbsp Worcestershire sauce - 1 tbsp Dijon mustard - 1 tsp oregano - 1 tsp onion granules - 3 crushed garlic cloves - Salt and pepper - 400ml of beef stock - 2 tbsp bistro gravy powder with 50ml water Method: 1. Cook your meatballs for a few minutes on the pan to brown, add to your slowcooker 2. Fry the onions on the same pan including the juices from the meatballs, then add this to the slowcooker with all other ingredients 3. Cook on high for 4 hours or low for 7-8 4. 45min · 4 servings Recipe: • -400g firm tofu • Pat dry it and shred with a grater. • -2 Tbsp soy sauce • -1 Tbsp oil • -2 Tsp cumin • -1 Tsp Paprika • -salt to taste • Toss around, spread on a baking sheet and bake at 350F/175C for 30mins (give it a stir every now and then). • Sauce: • -1 onion • -3 cloves garlic • Fry in some oil until softened. • -1 Tsp cumin • -1 Tsp Paprika • -1/2 Tsp chili powder • -2 Tbsp tomato paste • Roast 2-3mins • -1/3 cup (80ml) pineapple juice • -1/2 Tbsp soy sauce • Stir it in and bring to a bubble. • Then reduce the heat and stir in the baked tofu. • “Salsa verde”: • -a bunch cilantro or parsley • -2 cloves garlic • -4 Tbsp vegan yogurt • -4 Tbsp vegan mayo • -1/2 lemon • -1 Tsp cumin • -1 Tsp agave • -salt to taste • Ble
