INGREDIENTS: Breakfast radishes, halved lengthways Runner beans, trimmed, blanched in boiling water until slightly tender and then dried with paper towel Butter Olive oil Salt For the vinaigrette: A heaped tbsp wholegrain mustard Extra virgin olive oil Salt Apple cider vinegar or lemon METHOD: Heat some oil in a frying pan and when hot, fry the radishes flat side down Don’t move them around the pan. Let them get colour and caramelise Once they have colour, add a knob of butter, start to toss them around and let them darken a little further.
