👉🏼 Choose plum tomatoes; 
👉🏼 Clean out the liquid core with seeds, lay the tomatoes tightly on a baking sheet, skin side down; 
👉🏼 Sprinkle with salt (0.5 tbsp) and sugar (1 tbsp), put a few sprigs of thyme (this is the amount for 1 baking sheet of tomatoes); 
👉🏼 Bake ii on conversational oven at 250F, for 7-8 hours, carefully watch the tomatoes after 6 hours so that they do not dry out; 
👉🏼 Place the tomatoes in a jar, add 2-3 cloves of garlic and thyme (you can add red pepper if you like), pour in your olive oil, close the jar and store in a dark place or refrigerator.

Sun-Dried Tomatoes

Ingredients:

2 lbs ripe tomatoes (Roma or cherry work well)
3-4 garlic cloves (thinly sliced)
Fresh rosemary sprigs (about 2-3 sprigs)
1 cup extra virgin olive oil (or more to fill the jar)
Salt (to taste)
Freshly ground black pepper (optional)

Instructions:

Preheat the Oven:

Preheat your oven to 250°F (120°C) and line a baking sheet with parchment paper.

Prepare the Tomatoes:

Slice the tomatoes in half lengthwise (for Roma tomatoes) or horizontally (for cherry tomatoes). Scoop out some of the seeds for faster drying.
