A few weeks ago we made eggs out of mung beans and today we’re making eggs out of pumpkin seeds. This rendition is perfect for a scramble and is actually MINDBLOWING in a fried rice! 

THE GOODS:

* 1 cup raw pumpkin seeds, soaked for 45 min in boiling water
* 2 cups filtered water
* 1 tsp turmeric
* 1 tsp black salt
* 1/2 tsp mustard powder
* 1 tsp granulated garlic
* 1/4 tsp black pepper 
* 1 tsp olive oil

THE METHOD:
1. Once the pumpkin seeds have soaked, rinse them well to get off any loose skin particles. 
2. Add all ingredients except the olive oil into a blender and blend on high for 1 minute until fully smooth.
