Quinoa Chocolate Peanut Butter Honey Bars

Ingredients:

1 cup puffed quinoa (or toasted dry quinoa for crunch)
1/2 cup peanut butter (natural, no added sugar)
1/4 cup honey
1/4 cup coconut oil
1 tsp vanilla extract
1/4 tsp salt
1/2 cup dark chocolate chips (or thinly sliced chocolate bar)

Instructions:

Toast the quinoa: If using regular quinoa, toast it in a dry skillet over medium heat until it’s crispy and golden brown, about 5-7 minutes. Let it cool completely.

What you need:
1 cup puffed quinoa 
1/2 cup smooth peanut butter
1/4 cup maple syrup 
1/4 cup coconut oil
2 tbsp vanilla protein powder (optional) 
Dark chocolate melted 

How to:
1. In a mixing bowl combine all ingredients except for chocolate.
2. Mix until combined and press into silicone mini muffin moulds.
3. Place in freezer for 15 minutes.
4. Pour dark chocolate on top. Return to freezer for 30 minutes.
5. Enjoy.
