Tamarind chicken

Lara Lee's Tamarind Chicken relies on a potent tamarind marinade for deep flavor. The tamarind chicken can be cooked on the grill or in the oven.

This is one of my favourite stand-by dishes and always fits the bill when I want something sticky with bags of flavour, take-out style.

To make this a one-pan meal, add quick cooking veggies to the pan, like sliced bell peppers or broccolini, before braising in the oven. For easy clean-up, place the chicken into a large sealable plastic bag and pour the marinade into the bag. Seal the bag and turn the chicken often to ensure the chicken is evenly immersed in the marinade.

Creamy Mexican Tamarind Chicken features zesty tamarind and chipotle peppers in a creamy reduced-fat sauce lightened up with plain Greek yogurt and milk rather than cream. Elevate this Mexican-inspired main dish with optional caramelized onions, and cilantro rice or red rice. ¡Buen provecho!
