Pea and mint butter beans, serves 2-3! You will need…
1 x 700g jar butter beans (or 2 x 240g tins) drained
1 onion, diced
1 lemon, zested
200g frozen peas
10g fresh mint, finely chopped
60ml reduced fat crème frâiche
1 tbsp olive oil

1. Boil a pan of water, then add your peas and cook for 4 minutes. Remove, drain and run under cold water to cool them down instantly.
2. Add half the peas to a blender with the juice of your lemon and a pinch of salt, and blend. Add a splash of water if it seems a bit too thick. Set aside once done.
3. Heat the olive oil in a large pan over a low heat, and add the onion and the zest of your lemon.
