Vegan tarka dahl

Tarka dal, or lentils with tomatoes and cilantro, is made with tender mung lentils in a spiced tomato sauce.

Her hands that move with well-practised grace on her pottery wheel, moulding large, unfriendly-looking boulders of clay into elegant bowls and biryani pots. Her work, of course, out of which we ate this heavenly dal. And the manner in which she introduced it: ‘I just put it all in a pot and stir it.’ It’s that simple, and now it is one of my favourite things to make and eat most weeks

There are many versions of this north Indian dish, as the name literally means spiced, flavoured lentils. You can also use red lentils for this recipe.

Tarka is the name given to the infused hot oil which is poured over the dhal giving the dish its incredible aroma. We like to serve our dhal with Indian bread, such as naan or roti. However you can also serve this dish with rice for a more filling meal.

Recipe video below. There are countless variations of Dal all across India. This is a northern Indian version called "dal tadka" that's akin to what is served in Indian restaurants. "Tadka" refers to spices sizzling in hot oil that's poured over the dal. It's dramatic and gives it a flavour bump - but is optional.
