This easy vegetable fried rice recipe comes together quickly and is so good! Healthy, with protein from the eggs and packed full of veggies, this vegetable stir fry rice is so full of flavor! Less than 10 ingredients and only 20 minutes to make. I love to make extra rice for a meal earlier in the week then I save it in the fridge for a super easy vegetable fried rice meal later on in the week. Ingredients:
5 tbsps olive oil
1 carrot, grated
1/2 onion, chopped
2 cups of basmati rice
3 cups of water
1 stock cube
salt to taste

Method 
Wash and grate the carrot 
Chop the onion into small bits 
Measure out your rice and rinse several times in water until the water runs clear 
Pour olive oil into a pot and bring to medium-high heat (e.g level 7 on an induction/ceramic hob)
Fry the carrots and onion in the oil for about 5 minutes, stirring it every so often 
Add in the rice and fry for another 5 minutes, stirring it every so often 
Add in the water and once it starts boiling add the stock cube and salt to taste
