Sent from my iPad❤️ Kumara, Spinach & Avocado Salad ❤️ ✔️Handful of Baby Spinach ✔️2 medium Beetroots, grated ✔️1/2 Orange Sweetas Kumara, peeled, cubed, roasted (in a little olive oil, salt & pepper in oven at 200C for 20mins, until golden) ✔️Small handful Walnuts & Pumpkin Seeds ✔️1 tbsp Pure Maple Syrup ✔️1/2 tsp Mixed Spice ✔️1/2 Avocado ✔️Sprinkle of Feta (optional) ✔️Dressing: Lemon, Olive Oil & Honey ✔️Salt & Pepper Place the baby spinach on the serving platter, top with grated beetroot, and a little feta (if using). Place the cooked kumara on top, along with the avocado. Roast the nuts and seeds quickly, pan on high heat, place the nuts and seeds in, along with the pure maple syrup and mixed spice, toss for a minute. Arrange on top of the salad. Add salt and pepper. In a separate bowl, mix together 1/2 lemon juiced, 1 tbsp of olive oil, and a tsp of honey. Drizzle over the salad. Enjoy!! Nicci xx
