I Just adjusted a bit for my personal preferences. 😋 I am not a huge sun-dried tomato fan but I still scarfed these down. Will experiment with more flavors now that I know how good these are. Protein Poppin’ Breakfast Biscuits 💥🍳 (aka your new go-to for a hearty, high-protein, stay-full-for-hours kinda breakfast 🙌🏽) Preheat your oven to 375℉ and line a large baking sheet with parchment paper. In a skillet over medium heat, warm up 2 tsp olive oil, then add ½ cup diced onion and garlic and sauté for about 2 minutes. Add in 2 handfuls of chopped baby spinach and 1 large clove of minced garlic, and cook just until the spinach wilts — about 1 minute. Set aside to cool. In a big mixing bowl, whisk together: ✅6 jumbo eggs (yep, the big boys!) ✅The spinach/onion/garlic mix ✅½ cup sun-dried tomatoes (I used packaged from Trader Joe’s not the ones in oil) ✅½ cup Good Culture cottage cheese ✅6 Trader Joe’s chicken breakfast sausages, chopped small Then stir in the dry ingredients and cheese: ¾ cup almond flour ¼ cup coconut flour ½ tsp baking powder Pepper, to taste ½ cup shredded Trader Joe’s Lite Mozzarella ¼ cup shredded parmesan Mix it all up until well combined. Scoop about ¼ cup onto your lined baking sheet. Gently flatten each biscuit and top with a little extra light mozzarella. (I added less than 1/4 cup to the top of each of these. It was like 1/4 cup for 2) Bake for 22–25 minutes or until golden brown and cooked through. Let ‘em cool slightly and then devour.
