many jars filled with pink stuff sitting next to each other

I promised you heart-stoppingly disgusting pictures of my hamburger canning process a few days back. Today is your lucky day! A friend of mine is having a Food Storage Canning Event and needed the hamburger canned. I offered to do half of it. She dropped off 30lbs of raw hamburger for me to play with :0) I am just warning you now, this is going to be gross. If you are familiar with canning, you sterilize your jars, lids and wash the screw bands. I do not keep the jars hot. The hamburger I…

there are pictures of different foods being made in the kitchen and on the counter top

On my little blog here, you know the one I started because none of our family lives in Texas. I wanted our family to be able to enjoy and share with us the kids childhood. Fast forward ten years many of the family have passed on, plus two of the kids have now graduated high school and the third will graduate in two years! The traffic I get on the blog these days seems to be homeschooling, Bible Bowl, softball and canning related! The other day I received a message from one of the blog…

four jars filled with food sitting on top of a wooden table

Canning Hamburger Patties and Meatballs We have always done alot of canning with our vegetables, but as things began to look worse for the financial state of the Country, we decided it was time to re-think our habit of keeping our meats in the freezer. We decided to begin experimenting with pressure canning our meats. We had always made our own spaghetti sauce, so it was a no brainer to get started on the easy stuff - just plain hamburger meat, chunks of chicken breasts, and pork roasts. We…

jars filled with meatballs sitting on top of a table

When you cover meat with broth or water and then run it through your canner, the meat will be tender and juicy. That's a good thing for most meat. If you're going to use it in stew, soup, or gravy, it's excellent. But if you want to use ground meat for things like spaghetti and tacos, it'll leave the meat soggy no matter how much you try to fry the water out of it. When you make hamburger or sausage patties and can them covered with liquid, the burgers will likely crumble as you lift them…

four jars filled with food sitting on top of a table

This cheeseburger was made entirely out of our food storage. I started canning hamburger patties about five years ago. My first efforts weren't so good because I still canned meat by covering it with water and leaving headspace. It left the burgers soggy and tastless. Then I heard about dry-canning and I've been doing that ever since. Canned Hamburger Patties I brown the burger patties on both sides, then set them on a platter to cool a bit. When I form the patties I use a lid from a…

It was brought to my attention that the Ball Blue Book states that you can put up sausage in patties by one of my followers on Facebook. I did some reading and it wasn't clear what the thickness of the patty was suppose to be. The book say: "Shape ground pork in to patties or 3

several hamburger patties on a cutting board next to a jar of mustard

Zaycon's 93/7 super lean ground beef events are now going on around the country. I thought I would share how easy it is to pressure can hamburgers. Beginners note: All canned meat must be pressure canned (not in a pressure cooker). If you don't have a pressure canner, now is the time to start saving (there is a link at the bottom that leads to my personal recommendations). Took a 10 lb. chub. Sliced it into 40 slices (makes 1/4 lb. burgers), Make sure the meat is chilled, makes for easier…

O.k I'm a canning fool today. Now I'm onto hamburger.Canning meat raw pack is sooo easy! I packed the jars full of raw hamburger .There is no need to add liquid to these jars so I just put the lid on. Next I placed them in my pressure cooker. I can fit 7 quart jars in my canner. When canning hamburger it needs to cook at 11 pounds of pressure for 90 minutes. If you are doing pints then it's 11lbs for 75 minutes. After the 90 minutes are up you turn off the heat, however, it does take a while…
