Ingredients: - 1 large tortilla - 2 eggs - 1/4 cup shredded cheese (mozzarella or your choice) - 1/4 cup cherry tomatoes, halved - 1/4 cup fresh spinach - 2 tbsp sliced olives - 1/4 cup crumbled feta cheese - Salt and pepper to taste - Olive oil spray  Instructions: 1. Preheat oven to 375°F (190°C). 2. Place the tortilla on a baking sheet. 3. Beat the eggs in a bowl and pour evenly over the tortilla. 4.
