4th of July
5lbs ground beef
I small can of green chilies
1 can of rotel
1 onion
2 large cans of enchilada sauce (red)
2 to 3 taco seasoning
Huge bag of shredded cheese
30 flour tortillas soft taco size
Cook hamburger , onion together . Drain fat off and add taco seasoning and water . Per instructions on taco seasoning package , add can of green chili’s, and rotel . Of course other seasoning as you wish. I used a cake pan I put about 1/2 cup of enchilada sauce in bottom in pan . I add 1/3 cup beef mixture to to tortilla add tablespoon of cheese then roll up and lay in pan fold side down . After you fill your pan up cover with enchilada sauce and add generous amount of cheese on top and bake for 20 to 30 minutes on 350. If cheese starts browning to much then cover. Heat throughly .
This recipe made 31 I had three cake pans, I had 9-11 per pan . I have tweaked this recipe to my families liking.
