Caramelised onion, cherry tomato and vegan burrata flatbread for a quick and fresh sunshine lunch! Recipe 🍅To make the caramelised onion add 1 tbsp of olive oil, 1 tbsp balsamic vinegar and 1 tbsp coconut sugar (or sub regular sugar) to a pan and heat until bubbly. Add thinly sliced red onion and cook until softened 🍅Add vegan burrata, halved cherry tomato’s and your red onions to a focaccia or a flatbread and cook until browned 🍅Top with rocket and basil, slice and enjoy

Recipe: •Chop and add to a hot pan with oil: 1/2 large white onion, 2 bell peppers, 1/2 broccoli and the stem, 3 cloves of garlic and one block of firm tofu. Cook until tofu is golden brown. •Meanwhile make quick sticky sauce by adding to a pan; 2 tbsp sesame oil, 2 tbsp soy sauce, 1 tbsp rice vinegar, 2 tbsp coconut sugar, 2 tsp cornstarch. Cook on high heat and whisk continuously for 4 minutes, until thickened. •Serve your stir fry with rice and drizzle the sauce and sesame seeds over the top.
Stuffed sweet potato easy vegan lunch
Recipe 🍠Take 1 large sweet potato and cut in half, coat in olive oil, paprika and salt and bake for 50 minutes at 180C 🍠When soft, scoop out the innards, being careful to not break the skin and add to a bowl 🍠Mash the innards with vegan cream cheese, 1 tsp Mexican seasoning and 1 tsp garlic salt 🍠Add 1 tin of sweet corn and 1 tin of black beans and mix 🍠Add the mix back to the skins and bake at 190C for 15 minutes 🍠top with avocado, spring onion, vegan yogurt and chilli flakes
