Melt the chocolate chips and coconut oil together in the microwave on 30 second increments, mixing between each increment until the chocolate is smooth. On a parchment lined tray, add a spoonful of the melted chocolate and press a rice cake thin on top. Repeat this process for all of the rice cakes. Freeze your chocolate rice cakes for 10-15 minutes to set. 4-5 salted rice cakes 
200g dark chocolate
2 heaped tbsp smooth peanut butter 

Melt the chocolate in 10 second bursts in the microwave until smooth. Add the peanut butter and mix. Crush in the rice cakes and mix again. Scoop into the mini muffin tray and chill in the fridge for 1-2 hours. Remove & enjoy 😊! These will keep perfectly in the fridge in a sealed container for 2-3 weeks. 

Notes - I used salted @kallo rice cakes here but you can use plain and add a pinch of salt if you prefer.
