I hope y’all enjoy it.🍅🥣Creamy tomato, basil soupOlive oil Two small diced onions Five cloves of garlic, minced 562,000 tomatoes that you harvested from your garden 🍅😂 I think it was 3-4 cups of a variety of tomatoes.Two 14.5oz cans of fire, roasted diced tomatoes 48oz chicken broth Season to taste with salt, pepper, Cajun seasoning(I use KFred) and a garlic herb blend.(I use McCormick garlic and herb) You can start off with about a teaspoon of each and then go from there.16oz heavy cream1/2 cup grated Parmesan Fresh basil Coat the bottom of your pan with olive oil. Add diced onions and sauté for 8 to 10 minutes. Add minced garlic and cook for another minute or two. Next, we’re going to add in the tomatoes, fire roasted diced tomatoes, chicken broth, and spices. Let this come to a boil cover reduce heat to super low and let simmer for an hour and a half to two hours. Make sure to stir every so often so it doesn’t stick to the bottom of the pan. Grab yourself an emulsifier and emulsify your tomatoes until you have a smooth texture. Now you can add in your heavy cream and the Parmesan cheese mix well and let simmer for another 10 to 15 minutes.I served this with sourdough grilled cheese. It was so good!
