Italian food is, in my opinion, one of the best cuisines to incorporate venison into. When I don't have time to make my venison meatballs, this bolognese is a great go-to. To balance everything out I use red wine in my sauce and a bit of red wine vinegar. The acidity compliments the venison and really brings out the best that is has to offer.
