Scallion soup

This is cookbook author Colman Andrews's variation on vichyssoise.

With fresh noodles, a light but savory scallion, ginger and chicken-based broth, this soup is exactly the type of comfort food I crave in the middle of winter. The soup is inspired by A Common Table with the addition of homemade noodles because noodles for extra chew and a long life!

I'm enjoying a bowl of this soup as I write this, and am feeling considerably better for it, mentally and physically.
