Tortilla baked eggs 1 large tortilla 3-4 large eggs 2 tbsp cottage cheese 1/2 cup mozzarella cheese 1/2 cup cheddar cheese 1/3 cup cherry tomatoes Hand full of baby spinach, chopped Salt and pepper to taste 1 tbsp red chili flakes 1 tsp oil Chives, for garnish ( optional ) Method: Pre heat the oven to 350 F. Grease a round baking pan with oil, lay flat the tortilla wrap. Crack eggs add cottage cheese, season with salt and pepper, beat the eggs until everything is well combined. Add tomatoes and spinach, sprinkle chili flakes. Top it with mozzarella and cheddar cheese. Bake for 25-30 minutes or until the eggs are cooked through. Garnish with chives and serve with your fav hot sauce.
