The plateau is composed of silty dust deposited by thousands of years wind, and then carved into fertile terraces for farming.  Much of the land here is still harvested by hand, and cave homes are carved out the friable hillside.  Most of the people I spoke with said their only cash crop (corn) brought about $1000/year.
