Because its very easy to warp, crack, annoying to glaze and takes a lot of kiln space.   Buuut... its very satisfying to eat using your own plates, so here we are.  Making side plates for you!  Here are a few extra tips:   • definatelly use bats! It will be impossible to remove it from the wheel without distorting, if you dont.   • use a sponge on your hand to keep the clay wet all the time.   • careful with the thickness, plates are very easy to go too thin, if you dont have enough clay.   • dry it slowly and try to have it upside down after trimming, so its an even dry. To achieve this shape, I throw a normal cylinder, which I then narrow from the outside, starting from the bottom and trying to bring both hands up evenly across the height. I use a stick with a sponge when I pass the rib, so I can remove the slip without the cylinder coming off centre.
